Synergistic Stabilization of Oil-in-Water Emulsions Using a Binary Mixture of Chitosan and Hydroxypropyl Cellulose
Summary
Oil-in-water emulsions stabilised by chitosan and hydroxypropyl cellulose together are far more stable than with either biopolymer alone, with an optimum 5:5 mass ratio. Droplet size, tunable from 5 to 30 µm through shear and biopolymer concentration, hardly depends on the oil fraction, and the emulsions remain stable between pH 2.6 and 5.9.
