nQCM (Quartz Crystal Microbalance) sensor is a sensor that developed in variouse scientific fields, such as biosensor, chemical sensing, and material science.QCM sensor was developed as taste sensor (e-tongue) that used to knowing chemicals can’t be known by the human tongue. This research aims to determine the sensor characterization that includes response time, limit detection, and sensor sensitivity. The sensor used is a QCM sensor with membrane coating Methyltriocthyl Ammonium Chloride. The analytical method used is a linear regression analysis method. The response time result of QCM sensor with membrane coating is porcine gelatin have a faster respond than bovine gelatin, the difference is 1s. Limit detection of QCM sensor with a pure silver electrode and QCM sensor with coating membrane can detect a sample eith different consentration. QCM sensor with Methyltriocthyl Ammonium Chloride on porcine gelatin is more sensitive than bovine gelatin. Sensitivity values of porcine gelatin is 642,7541 Hz/mM, while the sensitivity values of bovine gelatin is 348.9432 Hz/mM. Based on this research, it can be known that QCM sensor is more sensitive in detection the porcine gelatin sample.
